Ingredients for khaman ok collar
To make a solution
Bason – 1 cup
Suji (Rava) – 1 tbsp
Lemon juice – one and a half teaspoons
Eno powder – 1 teaspoon
Raw pepper (chopped) – 2 pieces
Ginger (fried) – 1 teaspoon
Water – 3/4 cup
Yogurt – 1/4 cup
Oil – 1 teaspoon
Salt – to taste
Get in the mood
Oil – 2 tbsp
Curry leaves – 10-15
Rye – 1/2 teaspoon
Cumin – 1/2 teaspoon
Sesame – 1 teaspoon
Sugar – 1 tbsp
Green pepper (cut to length) – t
Fried fresh coconut – 2 tbsp
Hing – 1 pinch
Water – 1/3 cup

How to make khaman ok kokla
First prepare all the ingredients for making khaman ok kokla. To make okkala, add 2 to 3 cups of water to the pot. Keep heating over medium heat. Before placing the plate, heat the pot to make ok kokla for at least 5 minutes. Now take 2 small plates (the plates should be such that they can be easily placed in the pot). Grease with 1 teaspoon of oil.
Now in a large bowl mix the besan, semolina, lemon juice, green chilli-ginger paste, yogurt and 3/4 water. Add salt to taste. Now mix well. Mix in such a way that there are no defects in the solution. Now add eno powder to this solution and beat for one minute, it will almost double the solution.
After that, immediately pour the solution on the greased plate. While pouring the solution, keep in mind that the plate is only 1/2 inch high.

Now place a stand in a pot to make ok kokla, then place a plate on it and let it cook on medium heat for 10 to 12 minutes with the help of steam.
Next, check the ok cola with a knife. If the knife does not stick to the back after cutting, it means that the knife has been cooked, otherwise let it cook for a while longer.
Tampering method
Now take a pan and heat 2 tablespoons of oil in it. Once the oil is hot add the mustard and asafoetida. When it starts cracking, add the cumin, sesame, curry leaves and green pepper and fry for a few seconds. Now add 1/3 cup water and sugar. Let it boil. After boiling, let it cook for one minute. Now that your tampering is ready, pour it over the hopper and shake the ok hopper gently so that the tampering is well covered.
Now garnish with chopped coriander and chopped coconut and serve with green coriander chutney. In this simple way Gujarati Khaman ok can be enjoyed at home.
