    Materials for dosa
    Rice – 3 cups
    Washed urad dal – 1 cup
    Baking soda – 3/4 teaspoon
    Fenugreek seeds – 1 teaspoon
    Oil – for frying dosa
    Salt – to taste

    Ingredients for dosa spice
    Potatoes – 500 g
    Oil – 2 tbsp
    Beans – 1 bowl
    Turmeric – 1/4 teaspoon
    Rye – 1 teaspoon
    Coriander powder – 1 teaspoon
    Ginger – 1/2 inch pieces
    Green pepper – 4-5
    Amchoor – 1/4 teaspoon
    Red pepper – 1/4 teaspoon
    Green coriander – 2 tbsp
    Salt – to taste

    Method of making masala dosa
    To make masala dosa, first take urad dal and rice. Wash them well and keep them soaked overnight. Clean a little fenugreek and soak it overnight. Now drain all the water from the soaked pulses and crush the flying pulses with fenugreek. Then put it out in a large container. Separately grind the rice. Use less water when grinding.

    Now mix the two to make a thick mixture. Now to ferment this mixture, add baking soda, salt to it and keep in a warm place. Keep it for 12 to 14 hours. This will double the fermented mixture than before. Now this mixture is ready for making dosa.

    Now boil the potatoes for dosa masala and then peel and apply after cooling. Now to make the potato seasoning, heat the oil in a pan and then add the mustard to it. Now add turmeric powder, coriander powder, green chilli, ginger paste. Fry it for about a minute. Now add peas and 2 tablespoons of water. Add potatoes, salt, red pepper, mango powder to this spice and then fry for 2 minutes and add green coriander. Now the spices are ready for your dosa.

    Now first make a nonstick fry to make dosa. Then put some oil in it. Place the dosa mixture over medium heat and spread it in the form of a dosa. When it becomes slightly crispy, fill with spices in the middle and cover. This way your masala dosa is ready. You can serve it with coconut chutney and sambar.
