Ingredients for Potato-Capsicum Curry
Potatoes – 5-6 t
Capsicum- 2
Tomatoes- 2
Cumin – 1/2 tsp
Coriander powder – 1 tsp
Red Chilli Powder – 1/2 tsp
Turmeric – 1/2 tsp
Asafoetida- 1 pinch
Green coriander leaves – 3 tbsp
Ginger- 1 inch piece
Oil – 3 tbsp
Salt – as per taste
How to make Potato-Capsicum Curry
To make potato-capsicum curry, first wash and clean the potato and capsicum. After wiping the potatoes with a dry cotton cloth, cut the potatoes lengthwise. You can also peel the potatoes and cut them. After that, cut the capsicum into pieces. Now chop the green chillies and coriander leaves.

Now add oil to a pan and let it heat on medium flame. When the oil is hot, add the cumin seeds and let it grind. When the cumin seeds start to splutter, add finely chopped ginger, asafoetida, green chillies, turmeric and coriander powder and fry for a few seconds. After that add the chopped potatoes to the masala and mix well with the masala and let it cook. Cover the pan and cook the vegetables for 5-7 minutes.
When the potato becomes soft, mix it with chopped capsicum. Sprinkle some water on the vegetables if necessary, cover the pan again and let the vegetables cook. Meanwhile, keep stirring the vegetable with a pepper. After cooking for a while add finely chopped green coriander on top with red chilli powder and salt to taste.

Now add finely chopped tomatoes to the vegetables and cook for some more time so that the tomatoes also become soft. After that turn off the gas. Your delicious potato-capsicum vegetable is ready. Serve with roti, paratha or rice.
