Ingredients for making Navaratna Korma

Potato- 1
Capsicum- 1
Carrot- 1
Tomato- 1
Onion- 1
Peas – 1/4 cup
Beans – 1/4 cup
Ginger-garlic paste – 1 tsp
Coconut milk – 3/4 cup
Garam masala – 1 tsp
Turmeric – 1/2 tsp
Red Chilli Powder – 1/2 tsp
Coriander powder – 1 tsp
Ghee/Oil – 2 tbsp
Salt – as per taste
For the paste
Cashews – 8-10
Almonds – 8-10
Watermelon seeds – 1 tsp
For decoration
Pomegranate – 2 tbsp
Cashews – 1 tsp
Raisins – 1 teaspoon
Ghee- 1 tablespoon

Navaratan Korma Recipe
Soak cashews, almonds and watermelon seeds in water for 30 minutes to make delicious navaratan korma for lunch or dinner. Then take it out of the water and peel the almonds first. After that put all in the mixer and grind it to make a paste. Now take out the prepared paste in a bowl. Then cut tomatoes, onions, beans, carrots, potatoes and capsicum into pieces.
Now heat a pan with oil. Add finely chopped onion to it and fry on medium flame. When onion turns golden, add ginger-garlic batter and fry. Then add tomatoes and saute, when tomatoes become soft add turmeric, coriander powder, red chili powder and cashew-melon paste to the pan and mix well. Then cook with one-fourth cup of water.
After the mixture cooks for 2 to 3 minutes, add all the chopped vegetables. Then mix well with a cup of water and coconut milk. After that, cover the pan and let the vegetable cook on low flame for 10 to 15 minutes. Meanwhile keep stirring the vegetables. Meanwhile, heat ghee in a small pan and fry cashew nuts. Take out in a bowl.

After cooking, when the vegetables become soft, turn off the gas and take out the vegetables in a large bowl. Garnish it with roasted cashews, pomegranate seeds and raisins. Delicious navaratna korma made with vegetables. Serve with paratha, naan or rice.
