    Ingredients for Besan Gatta Curry

    for the bundle
    Besan- 1 cup
    Curd – 2 tbsp
    Kashmiri Red Chilli – 1/4 tsp
    Turmeric – 1/4 tsp
    Coriander seeds – 1/2 tsp
    Ajwain – 1/4 tsp
    Asafoetida- 1 pinch
    Desi ghee – 2 tbsp
    Salt – as per taste

    For the gravy
    Finely chopped onion – 1
    Whipped curd – 1 cup
    Cumin – 1 tsp
    Fennel seeds – 1/2 tsp
    Kasuri Methi – 1 tsp
    Ginger-garlic paste – 1 tsp
    Kashmiri Red Chilli – 1 tsp
    Coriander powder – 1/2 tsp
    Cumin powder – 1/4 tsp
    Garam masala – 1/4 tsp
    Asafoetida- 1 pinch
    Bay leaf – 1
    Chopped green coriander – 2-3 tbsp
    Oil – 2 tbsp
    Salt – as per taste

    How to make Besan Gatta Curry
    To prepare besan gatta curry, first place besan in a large bowl. Add crushed coriander seeds, celery, red chilli powder, turmeric, a pinch of asafoetida and mix. Then mix gram flour with 2 tbsp of desi ghee, curd and salt to taste and make a dough. Remember that the dough should be soft after mixing well. Add 2 tbsp water to it and knead the dough.
    Knead the dough while mashing it until it is very soft. If you knead the dough with oil, it will not stick. Now take some flour and roll it. Then boil water in a large pot. After the water starts boiling, put the prepared cylindrical balls in it. Boil it for 10-12 minutes, so that the guts get soft properly. After that strain the balls and place them on a plate.

    Now start the gravy making process. For this heat a pan with 2 tbsp oil. Once the oil is hot, fry the whole cumin seeds, bay leaf, fennel, kasuri methi and a pinch of hing. After frying for a while add finely chopped onion to the masala and cook while stirring. When onions turn golden brown, fry them in garlic-ginger batter.

    After that add turmeric, red chili powder, cumin powder and coriander powder to the pan and mix it well. Cook the masala on low heat. After some time add 1 cup of water to the pan. You can use boiled gatta water if you want. Now add 1 cup curd to the pan and let the gravy boil well. During this time, keep stirring the gravy continuously.

    When the gravy starts to boil, add gram flour and mix well with the help of chillies. After that, add salt to taste and cover the vegetable and cook for 10 minutes. Boiling the guts well with the gravy will help the gravy to absorb well. Then mix the vegetables with garam masala and green coriander leaves. After cooking for 1-2 minutes turn off the gas. Delicious gram flour curry is ready. Serve with roti, naan or rice.
