    Ingredients for making potato-okra curry

    Bhindi – 1/2 kg
    Potatoes – 3
    Onion – 2
    Garlic cloves – 4-5
    Cumin powder – 1 tsp
    Red pepper – 1.5 tsp
    Coriander powder – 1 tsp
    Dry mango – 1 teaspoon
    Turmeric – 1/2 tsp
    Garam masala – 1/2 tsp
    Chilli Flakes – 2 tsp
    Oil – 1/4 cup
    Salt – as per taste

    To make delicious potato-okra curry, first wash the okra well and clean it with a cloth. Next, take the potatoes, peel them and cut them into small pieces. Now wash the potatoes and take them out in a bowl. Now take a pan, add oil and heat it on medium flame. When the oil is hot, add potatoes. Now fry until golden. After that take them out on a plate.

    Now take it with garlic and onion. Cut the onion lengthwise and cut the garlic into small pieces. After that, we will put them in the remaining oil of the pan. Now these will also be fried till they turn brown, so that the rawness goes away. Now add okra and saute with onions for about 1-2 minutes. Now reduce the gas flame and add fried potatoes and mix both well and cook. Now add red chilli powder, coriander powder, cumin powder, dry mango powder, chilli flakes and salt to taste to the vegetables and mix.

    Now let it cook for 2 to 3 minutes. After that, cover the pan and leave the vegetables for 5-6 minutes. But keep stirring in between with the help of a pepper. This prevents the vegetables from sticking to the pan. When the potatoes and okra become completely soft, switch off the gas and take out the pan. Now you can serve this delicious aloo bhindi with bread or roti.
