Bhindi – 500 gms
Tomatoes (cut) – 2
Onion (cut) – 2
Garlic Clove – 5
Ginger pieces – 1
Green pepper – 2
Red chilli powder – 1 teaspoon
Turmeric powder – 3/4 teaspoon
Coriander powder – 1 teaspoon
Cream – 1 teaspoon
Yogurt – 1 teaspoon
Salt – to taste
Oil – as needed
Bay leaves
How to make Shahi Bindi
To make Shahi Vindi, first put a pan on medium heat. Add tomatoes, onions, garlic, green peppers, nuts and cashews and boil in water. When the onion is soft, turn off the fire and let the whole mixture out, cool and then grind. Now take another pan and put oil in it on medium heat. When the oil is hot, add bhindi and fry in half. Then put it out in a container. Now pour some more oil in the same pan and heat.

When the oil is hot, fry well with bay leaves and cinnamon. Now put the paste in it and cook. Once the paste is well fried, add salt, turmeric, red chilli powder, coriander powder and yoghurt and stir well. Add water as needed and mix everything well. Now put half fried bhindi in this gravy and cover and cook for about 2-3 minutes.

After covering and cooking, add cream to it and mix it well. Then turn off the gas flame. You can also add hot spices and kasuri methi at the end if you want. This is how your gravy Shahi Vindi is prepared. Now serve hot with bread or dressing.
