Ingredients for Crispy Muthia
Bason – 1/2 cup
Fenugreek cut – 1 cup
Wheat flour – 2 cups
Suzy – 1/2 cup
Red chilli powder – 1 tsp
Turmeric powder – 1 tsp
Sugar – 1 tsp
Lemon juice – 1 tsp
Oil (for Mayan) – 3 tbsp
Salt- to taste
Oil – for frying

How to make Crispy Muthia
If you want to make crispy muthiya, first make crispy muthiya, first wash it well with fenugreek. Now put it in a sieve and drain all its water. Now take a big deep pot and put half a cup of besan in it. Add wheat flour, semolina with besan and mix it all well. Then add red chilli powder, turmeric and salt to taste. When the fenugreek water evaporates well and the fenugreek is dry, add it to this mixture and mix well.
Now rub three tablespoons of oil in the mixture of gram flour, fenugreek and flour on the palms of both hands. Then add lemon juice and sugar. When all the mixture is homogeneous, add a little warm water and knead the flour to make muthiya. Knead the flour a little harder. Once the flour is ready, make a ball out of it and make a handful by pressing each ball by hand. Make all the dough in the same way.

Now take a pan and heat it in gas with oil. When the oil is hot enough, fry in it. Fry the muthiyas until they are golden brown in color. Fry all the fists in the same way. This is how your crispy fist was made. Serve with evening tea.
